Get Your Kids to Beg for Veggies?

Seriously?  Is that even possible?  Well, maybe in some households, but in our house it has been a challenge indeed.

So, I had to take a gander at Leann Forst’s new cookbook titled “How to Get Your Kids to Beg for Veggies” and see if it seemed to solve every mom’s problem (helping the kids get enough veggies in their daily routine) without the hassle of extra preparation.  Her trick?  Leann shows how to use veggies in the form of baby food and organic vegetable powders to sneak additional nutrients into favorite recipes in ONE STEP!  (And we’re giving away a copy of her book in the contest below.)

Could this be the thing that will make picky eaters a thing of the past and bring harmony to the dinner table?  With veggies “hidden” in recipes, the kids will be begging for their favorite dishes and not whining about having to finish their veggies.

The cookbook is packed with gluten-free, dairy-free, and paleo recipe options, and even has a section titled Kids Nutrition 101 as a guide for helping kids get the nutrition they need each day.

We loved that the book includes easy favorites like smoothies, pizza pocket sandwiches, chocolate muffins, turkey veggie meatballs, mac and cheese, pancakes, enchiladas, and even Banana Lime Cream Pie (and a whole lot more)!  With so many options, there are sure to be some new favorites for your family as well.

Here’s one of the recipes from the cookbook for you to enjoy:

Change up the color of M&M’s to customize these to any occasion.

 

Ingredients:

•  6 cups of whole grain Rice Krispy cereal (you can substitute gluten-free Rice Krispy Cereal)
•  ½ stick of butter
•  40 marshmallows
•  1 serving of organic beet powder or ½ cup beet baby food

Directions:

1. Melt butter in large sauce pan over medium heat.
2. Add marshmallows and stir until thoroughly melted.
3. Add in beet powder or baby food and stir until completely combined.
4. Remove from heat and add cereal.
5. Stir until well blended, then pour into greased casserole dish.
6. Add M&Ms or garnish of choice, if desired.   Let set for 15 minutes before cutting.

With Memorial Day weekend nearly upon us, we wanted to reflect for a few minutes about the real Memorial Day meaning and why we love Memorial Day weekend. In the United States, we celebrate Memorial Day to honor those who died while serving our country in the military. Many will place flags or decorations on the graves of the fallen and will pause to remember the great sacrifice made to ensure the freedoms we enjoy today.

Since Memorial Day also generally signals the onset of summer season, we often celebrate with picnics, parades, parties with family and friends, and family reunions full of refreshments, games, and smiling faces.

We might have to be cooking indoors this year, with the rainy forecast outlook for the weekend here in Texas.  But maybe you will have sunshine in your neck of the woods and be able to enjoy some great outdoor food – grilling and hosting a picnic or potluck for the whole family.

Either way, we have some terrific Memorial Day recipes perfect for dishing up at your gathering this weekend.

Memorial Day Recipes – Main Course
For the main course, you could always go with traditional grilling options like Hamburgers, Sausage, Chicken, or Ribs.  (For really large groups, it might be easier to do a crockpot dish such as Buffalo Chicken Sandwiches or Shredded Chicken Tacos.)  For a different twist on a traditional burger, try these:

smoky barbecue burgers, BBQ, grilling, picnic, quick easy recipesSmoky Barbecue Burgers – Made with bacon, garlic, onion, and barbecue sauce for seasoning, and stuffed with cheese (think outside the box with provolone, blue cheese or mozzarella).  If you’d rather not do the “stuffing” option, simply top the patty with cheese during the last couple of minutes of grilling, so it melts nicely.

 

Memorial Day Recipes – Side Dish
Especially if you’re eating outdoors, the side dishes can get a little tricky – dealing with the heat or bugs or both.  Remember to use a screen cover or something similar to keep the bugs out of dishes being served outdoors.  And if you’re worried about the heat getting to a dish, try setting the serving dish into a larger bowl or tray filled with ice/water to keep the dish cool.

We have some quick easy recipes (some you can even make ahead the night before) that will let you enjoy the party, too (rather than spending as much time fussing with the food). Mix up a colorful fruit salad or string fruit pieces (strawberries, grapes, pineapple) onto decorative skewers for fun fruit kabobs (makes easy finger food – the kids might even help with this task), your favorite salad or a nice vegetable tray.  We also like these side dish options:

Memorial Day Recipes – Beverage
Isn’t one of your favorite thing about a party or picnic, the excitement of serving beverages that are a little out of the ordinary, something special for the occasion?  We like serving up some colorful drinks like Strawberry Lemonade, Peach Lemonade, Blackberry Limeade, or this delightful watermelon beverage.

Watermelon Cooler
4 cups seedless watermelon (rind removed, sliced)
1 cup lemon sorbet
1 lemon (zested)
1-1/2 cups cold water
watermelon wedges and fresh mint, for garnish

In a food processor, blend watermelon, sorbet and lemon zest until smooth.  Stir in the cold water, then cover & refrigerate until very cold. Serve over ice and garnish with watermelon wedges and mint, if desired.  (Serves 6-8)

Memorial Day Recipes – Dessert
And finally we have made it to dessert.  For some of us, our favorite part of the meal, right?  Try a make-ahead dessert like this Chocolate Chip and Strawberry Trifle, a Creamy Strawberry Pie, or make your favorite type of cake and top with vanilla or cream cheese frosting with rows of blueberries, raspberries, and frosting for a patriotic treat.

Mother’s Day Brunch Ideas

 

 

mothers day brunch ideas, breakfast recipes, mothers day, heart shaped egg in toastMother’s Day is almost here, and we have some amazing Mother’s Day brunch ideas to share with you.  Okay, dads, if you are wanting to do something special for mom and have the kids pitch in, preparing her a simple Mother’s Day breakfast or brunch is a great way to start off her special day.

So let’s dish up some Eggs in Toast for mom with a special heart cut-out to make her feel especially loved.  This is a super easy breakfast recipe for the kids to help out with.

Here’s all you will need:

1. Two eggs
2. Two slices of bread
3. A little butter or margarine
4. A heart-shaped cookie cutter
5. A skillet and spatula for cooking
6. A little salt and pepper

First, let the kids help with the cookie cutter and cut one heart shape out of the center of each piece of bread.

Heat a little bit of butter in a non-stick skillet until melted; place one slice of bread (with heart shape cut out) and the heart shaped piece of bread into the skillet over medium-high heat until lightly browned on one side (about 3 minutes).

Let older kids help gently flip over the slice of bread and the heart shaped bread.  Then crack open one egg and pour it into the heart-shaped opening in the slice of bread.  Sprinkle egg with a little salt/pepper, as desired.

Allow to cook about 2-3 more minutes until other side of bread is lightly browned and egg is mostly cooked through; gently flip bread over to allow egg to finish cooking through. Remove to plate and keep warm.

Repeat with the other slice of bread and egg.  While the cooking is being done, the kids can get the serving tray and decorations ready to go.

Now, serve the heart shaped Egg in Toast to mom on a pretty plate and a serving tray with some fresh fruit, a candle or a small flower, a sweet card from the kids, and a pretty napkin.  (Or, as close to any or all of that as you can come.)

Whether serving it to her in bed or at the kitchen table, she will feel super special and loved to start out her Mother’s Day.  (But remember to have the kids help clean up the kitchen afterwards, too – right?  No need to stress mom out after starting her day with such a nice treat!)
