Bright Bold Blackberries

blackberries, picking blackberries, blackberry recipesBold Bursting Blackberries — you know the ones, right?  Those perfectly scrumptious plump blackberries bursting with juice and flavor?!?  While it isn’t quite blackberry season here, I noticed blackberries on sale at a local store this week and just couldn’t pass them up – I’m so ready for some of those amazingly delicious berries.

When the boys were younger, we used to go to a local farm during the summer and pick our own blackberries (and blueberries, too).  Yes, you had to be careful of the “stickers” on the blackberry bushes, but it was so worth it – to come away with baskets full of fresh deliciousness!

Of course, with the blackberries on sale, I can still stockpile them for a while, freezing a bunch to use for later until the season is in full swing.  The easiest way to freeze berries (after rinsing them lightly and drying thoroughly on paper towels) is to spread them out in a single layer on a flat tray with sides (so they won’t roll off) and place in freezer until berries are frozen.  Then scoop them up into a freezer bag and store until ready to use.

Eating blackberries is especially enjoyable because they not only taste so refreshing, but are chock full of healthiness; bursting with antioxidants as well as the phytonutrient anthocyanin which studies have shown helps protect the brain from oxidative stress. Blackberries even help fight against GI tract cancers, like colon cancer.  What’s not to like?

1. Giving Green – In honor of the true spirit of St. Patrick and his courageous efforts to help and save even those who were his enemies, consider Giving Green (pardon the pun) to help an influential cause or non-profit in your area – whether it be a local food bank, homeless shelter, children’s home, or something on a national or global scale like Meals on Wheels or Feeding Children Everywhere.  Encourage another family to participate with yours, starting a new holiday tradition, and making a difference by giving green.

2. Cleaning Green – Let’s be honest – in the kitchen, especially, there is always lots of cleaning to be done!  Consider going green with household cleaners (infographic & recipe cards), choosing chemical-free options – good for your household, your family, and the environment.  These days it is easy to find eco-friendly cleaners in the stores; you can also order them from places like the Clean Team or make your own green household cleaners and homemade carpet cleaner.

8 Quick One-Pot Meals

One-pot meals are perfect for keeping clean-up to a minimum (does the crowd cheer?) and usually means the entire meal is ready in less than an hour. What’s not to love, right? Whether the family prefers chicken, beef, or vegetarian options, we have a little something for everyone in this line-up.


1. Let’s start off with Mediterranean Pan Roasted Salmon – a simple skillet dish with salmon, cherry or grape tomatoes, along with fennel bulb and seasonings.

• 1 teaspoon dried basil
• 1 teaspoon garlic powder
• 1/2 teaspoon crushed oregano
• 1/2 teaspoon crushed rosemary
• 1/2 teaspoon sea salt
• 4 salmon fillets
• 5 teaspoons olive oil
• 2 tablespoons sugar
1 medium fennel bulb, sliced
• 1 cup cherry or grape tomatoes, halved
• lemon wedges, for serving

Mix the seasonings in a small bowl, and sprinkle 2 teaspoons of the mixture over the salmon fillets.  Reserve remaining seasoning mixture and set aside.

Heat 3 teaspoons olive oil in large skillet on medium-high heat; place salmon in skillet and cook for 5 minutes.

Meanwhile, add the sugar and remaining 2 teaspoons of olive oil to the reserved seasoning mixture and mix well.  Add fennel and tomatoes to the mixture; toss to coat.

Turn the salmon fillets over in the skillet and place fennel mixture around the salmon; cook for 6 minutes or until fish flakes easily with fork.

Serve with lemon wedges.


2. In this Skillet Swiss Steak dish, cube steaks are cooked with bell peppers, onions, diced tomatoes and seasonings, including Worcestershire sauce for a hearty one-pot meal.

3. Broccoli, Rice and Chili Beans is hearty skillet full of spicy flavor; rice cooked with vegetables and beans and topped off with some crisp bacon!

4. Our next one-pot meal is a Turkey, Kale and Rice Bake, full of vegetables and brown rice along with some sharp cheddar cheese for a tangy addition.

5. The Greek Style Skillet Supper is made with ground beef seasoned with cinnamon and oregano, cooked with penne pasta, spinach and feta cheese.  Yum!

6. Shepherd’s Pie is a one-pot meal (though it does call for mashed potatoes – which you could make ahead to keep the weeknight prep time to a minimum); ground beef cooked with carrots, onion, and seasonings, then topped with mashed potatoes and browned in the oven.

7. Farmer’s Market Fried Rice is a stir-fry and best prepared in a wok; brussels sprouts, parsnips, and tomatoes cooked up with brown rice and eggs; easily mix in other in-season vegetables, as desired.

8. And finally, we have a Savory Chicken Rice Skillet – chicken is lightly pan-fried with garlic and herb seasoning blend, some mixed vegetables and rice, with just a little sour cream and Parmesan cheese stirred in at the end.
