1. Cabbage Feeds our Brains

The mental function and concentration capacity of the brain is aided by the vitamin K and anthocyanins present in cabbage, especially high in red cabbage.  These same nutrients can also improve our system’s defenses against Alzheimer’s and dementia by helping prevent nerve damage and decay.

2. Cabbage Aids our Stomachs

The high fiber content of cabbage provides our system with the health benefit of roughage, a good remedy for many digestion-related problems.  A lack of roughage in the diet could contribute to things like stomach ulchers, indigestion, constipation, and even gastrointestinal cancers.  Much better to just add some cabbage to the weekly diet, right?

3.  Cabbage Boosts our Immune Systems

Cabbage is surprisingly high in Vitamin C – just one cup of chopped red cabbage holds 56% of the recommended daily amount.  Since Vitamin C is an anti-oxidant, it helps fight inflammation and prevent cell damage that could lead to chronic health conditions.  By boosting white blood cell production, it also helps our immune system fight off invasive bacteria.

4. Cabbage Keeps Blood Pumping

The potassium in cabbage helps protect us from high blood pressure (which can lead to heart attack and stroke) by opening up the blood vessels and easing the flow of blood.  When the blood can flow through easily, there is reduced stress on the arteries and veins, keeping the blood pressure at a lower level.

Now, there are many more health benefits to eating cabbage, but another reason to enjoy cabbage regularly is its versatility and ease of preparing.  Cabbage is the main ingredient of most slaws, and makes a colorful, crunchy addition to salads.  It’s also delicious when cooked up with pork or sausage or made into a warm hearty soup!

3 Steps to a Tropical Dinner

tropical view, tropical dinner, tropical recipes, organize recipes onlineDoes the cold weather make you long for a dish that will remind you of the Tropics and bring a little warmth and sunshine to your kitchen?  You’re ready for 3 steps to a tropical dinner!  While macadamia nuts can be a little on the pricey side (so keep your eyes out for a good deal on them), you don’t need very many of them to provide a good crushed coating for this Macadamia Crusted Chicken dish topped with Pineapple Apple Salsa.  Yum!

Last week this dish was a big hit at our house, and it is so quick and easy to prepare, you’ll wonder why you haven’t tried it before (I think it would work really well with any kind of fish, too!).

1. Make the Pineapple Apple Salsa – you can make this ahead of time, even the day before if you want, and keep it in the fridge until you’re ready to serve.

1 large apple – cored, diced
1-1/2 cups diced fresh pineapple
1 jalapeno pepper, de-seeded, diced
1/2 cup diced yellow bell pepper
2 tablespoons fresh lemon juice

In a medium-sized bowl, combine all of the salsa ingredients and stir; set aside or cover and refrigerate until ready to serve.

2. Make the Macadamia Crusted Chicken – seriously you will be ready to eat your tropical dinner in about 15 minutes!

2 boneless, skinless chicken breasts, cut in half and pounded to 1/2-inch thickness (or use chicken tenderloins)
1 teaspoon salt
1 teaspoon black pepper
6 ounces macadamia nuts, finely chopped or crushed
3 tablespoons olive oil

Place crushed nuts in a shallow bowl or spread on a sheet of waxed paper.  Place 1 piece of chicken on the nuts and press firmly to make the nuts stick to the meat; then gently flip the piece of chicken and repeat.  Carefully set aside and repeat with remaining chicken (or place each piece directly into heated skillet).  Heat oil in large skillet over medium heat; cook chicken pieces until golden on one side (about 3-5 minutes).  Use a spatula to carefully turn chicken over and continue cooking for another 3-5 minutes until cooked through and golden.

3. Plate the chicken on 4 plates and top with the Pineapple Apple Salsa.  Serve and enjoy!

These 3 Valentine’s Day last minute treats will save the day if you find yourself still trying to figure out how you are going to celebrate with that special someone.

Whether you’re staying in or going out for dinner, delight your significant other with one of these simple treats for dessert afterwards; and these are moderately healthy options, so you won’t have to regret indulging a little.  Add a little candlelight and soft music and you’re good to go.

These look amazing like you worked all day, but with only 3 ingredients and about 30 minutes of time, you’re finished in a flash!

12 whole strawberries (rinsed, thoroughly dried)
4 ounces of melting chocolate
4 ounces of melting white chocolate

In a small bowl, melt the chocolate in the microwave on high in 90 second increments until melted and creamy.  For the white chocolate, in a small microwavable bowl, melt on high heat in 60 second increments until melted and smooth.

Line a counter or baking sheet with waxed paper; drip strawberries in one type of chocolate or the other, allowing extra chocolate to drip back into bowl.  Lay the strawberry on the wax paper and allow chocolate to cool and harden (about 5-10 minutes).

Then cross-dip the strawberries, if desired, dipping chocolate strawberries into white chocolate and vice-versa, and again placing on waxed paper to fully cool and dry.

Use a fork to lightly drizzle alternating chocolate across dipped strawberries.  And you’re done!  Enjoy!

If chocolate is calling your name, this is the perfect treat; and still in a small portion, so you won’t indulge too much!

4 squares semi-sweet baking chocolate (or 3/4 cup semi-sweet chocolate chips)
1/2 cup butter (or margarine)
1 cup powdered sugar
2 eggs
2 egg yolks
6 tablespoons flour
2 cups whipping cream
2 tablespoons sugar

Preheat your oven to 425 degrees F.  Spray 4 custard cups (or small individual sized baking dishes) with baking spray and place on a cookie sheet.

Microwave butter & chocolate in a large bowl on high for about 1 minute until butter is melted; whisk until chocolate is also melted.

Stir in the sugar, then whisk in the egg yolks and eggs until well combined; stir in the flour.

Divide batter between prepared cups and bake 12-14 minutes or until sides are firm and center is soft; let stand 1 minute.

While cakes are baking, whip together the sugar and whipping cream until stiff.  Invert hot cakes onto dishes and top with whipped cream.

Just 3 simple ingredients and 15 minutes, and you will have a colorful light dessert dish that looks impressive. (Serves 2)

1/4 of an angel food cake, cubed
1/2 pound strawberries, washed, hulled & sliced
1/2 carton of light whipped cream

In bottom of two small bowls or dessert dishes, layer half of angel food cake pieces between the two dishes, followed by a layer of whipped cream spread evenly over the cake, and topped with half of the sliced strawberries.  Repeat the layers ending with strawberries.  Make it ahead and keep covered and refrigerated until ready to serve.

Let’s make the perfect smoothie.  If you are a little terrified of being in the kitchen, this is a simple recipe to try.  Most smoothies tend to incorporate a combination of these common steps.

a) Make it creamy by adding a nut butter such as peanut, almond, chia or some other combination

b) Fortify with a protein powder

c) Add in a liquid component – juice, milk, almond milk, soy milk, or water

d) Add some greens – an avocado, spinach, or kale

e) Add extra nutrition – with flax seeds, chia seeds, pumpkin seeds, etc.

f) Add some fruits – fresh or frozen blueberries, strawberries, apples, mango, pineapple, bananas, blackberries, raspberries, etc.

Here’s a simple recipe to get you started (remember to taste-test and adjust the ingredients as you like – a little more berry or liquid, etc.)

BERRY GREEN PROTEIN SMOOTHIE

1/2 cup mixed frozen berries (or desired fruit)

1/2 frozen banana

1 1/2 cups baby spinach

1 teaspoon chia seeds

1 serving of vanilla protein mix

15 ounces purified water

1 handful of ice

Blend all of the ingredients in a high speed blender until smooth. Taste and see if you want to adjust anything.  Enjoy right away; for even more enjoyment, share with a friend!  Below are some ingredients and tools for making your next smoothie making experience a little smoother.
