Ingredients:

  • 1 whole - Boneless, skinless Chicken Breast
  • - Spicy Brown Mustard
  • 1/2 cups - Orzo
  • 1 cups - Chicken Broth
  • 1 cups - Frozen French-Style Green Beans with Mushrooms
  • 2 teaspoons - Olive Oil
  • - Five Pepper Blend
  • Directions:

    Preheat boiler.

    Brush chicken with mustard and broil for 3 minutes on each side, until done (juices should run clear). Slice across the grain into narrow strips.

    Cook orzo in chicken broth according to package directions. Drain. While orzo is cooking, heat olive oil in saute pan over medium heat. Add green beans and mushrooms, and cook, stirring occasionally, for 5 minutes.

    Place beans in center of plate and season with pepper. Top with chicken and surround with orzo.

    Notes

    Makes 1 serving -- multiply ingredients by the number of people to be served.
    I often use brown rice if I do not have orzo on hand. And I generally cook the chicken on the grill instead of in the broiler.
